I’m Mark Bilbrey, your friendly neighborhood cheesemonger. These days, I educate customers and sell cheese at Porter Road Butcher in Nashville, Tennessee. Before that, I was a Murray’s cheesemonger at two QFC stores in Portland, Oregon and then a Kroger store in Nashville. And before that, well, I was an English professor, but nevermind that bit. If you’ll put up with my bragging for a second, get a load of this: I spend my days with cheese–tasting it, learning about it, talking about it, and sharing it.
